When I was surfing ingredients for inspiration to create something special for the Winter and Yule Season, I kept going back to the Wassailing traditions of days gone by.
Wassail is a beverage made from hot mulled cider and spices, drunk traditionally as an integral part of wassailing, an ancient English Yuletide drinking ritual and salutation either involved in door-to-door charity-giving or used to ensure a good cider apple harvest the following year.
When I came across some gorgeous freeze-dried cranberries and air dried apples, well the rest became obvious to me! Enjoy this as a lovely fruit and spice tisane or add it to regular or hard apple cider on the stovetop, or in the crockpot to enhance the seasonal flavours, not to mention, to make your home smell cosy and ready for those who come ‘wassailing’ to your door!
Organic Ingredients: Cranberry pieces, apple pieces, cinnamon pieces, whole cloves, ginger pieces, **Hawthorn berries, orange peel pieces.
Directions: 1 heaped teaspoon per cup, use boiled water and steep for 5 – 10 mins. Sweeten with honey or cane sugar. Or add 4 heaped tsp to a pot of cider and simmer for at least half an hour, add hunks of fresh apple and slices of orange to make an almost traditional Wassail!
